What are you up to this weekend? It’s supposed to be cloudy and rainy here in New Jersey, so we’re most likely going to hang out and do some cleaning around the house. Cinco de Mayo is this Sunday, so we’ll be celebrating with beef barbacoa and Mexican rice. Enjoy the weekend!

Since Chloe was born, Barry and I don’t go out quite as often as we used to. 🙂 However, this is OK with us – we are enjoying this current season of our life, as we know that it will fly by! As a result of spending more time at home, we’ve been coming up with creative at-home date night ideas that are a little more exciting than just watching a movie together. It’s supposed to be a rainy day here today, but we’re gearing up for a great weekend ahead. Tonight we’re celebrating my Mother-in-law’s birthday, and tomorrow is Chloe’s Baptism and celebratory lunch.

Although I’m the main cook in our home, Barry is in charge of the air fryer. He was interested in getting one for months, and I finally decided to gift him one this past Valentine’s Day. I have to say…doing this has been one of my best decisions to date. 🙂 He has had so much fun trying out recipes in it since then, and I’ve had even more fun taste-testing them! The biggest hit so far has been these tasty air fryer French Fries.

I have to give credit where credit is due and share that even though I love to cook and very much enjoy being the family chef, Barry has so much more of a natural knack for cooking than I do!… Read more


Today we’re celebrating my Mom’s birthday in Asbury Park. It’s our first time there this season (and Chloe’s first time – ever!) so we’re looking forward to visiting. Tomorrow, I have a friend’s baby shower to attend, and on Sunday, we’ll be celebrating Easter with both of our families.
