Servings: 12 bars


  • 3 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup non-dairy milk (you can use cow's milk if you prefer a non-vegan option)
  • 1 ripe banana, mashed (you can substitute 1/2 cup unsweetened applesauce for the banana, if desired)
  • 1/4 cup + 2 Tablespoons pure maple syrup
  • 1/4 cup melted coconut oil
  • 1 1/2 cups berries (fresh or frozen both work well. If using frozen, do not thaw)


  • Preheat oven to 350 degrees.
  • Gently mix all ingredients together in a large bowl.
  • Pour mixture into a greased 9x11 baking dish, and pat down the top with the back of a wooden spoon to flatten.
  • Bake for 50 minutes, uncovered.
  • Remove from the oven and let cool completely. Cut into bars, and enjoy!


Baking time:  Bake 50 minutes as instructed for soft bars. Bake 5-10+ minutes longer for firmer bars (if bars start to brown too much, cover with foil while baking).
Bars can be stored in a tightly sealed container in the fridge for up to a week, and in a freezer bag/container for up to three months.
